Hence, cookies.



Florentines

Ingredients:
60 g butter
90 ml liquid cream (the one you can whip, that is)
90 g cane sugar
60 g flour
300 g candied- & dried-fruit (that means candied citrus,orange & cherry plus almonds, all roughly cut)
2 teaspoons lemon juice
zest of 1 lemon
180 g dark chocolate

Pre-heat oven at 180°. Pour butter, cream, sugar, lemon-juice and -zest in a pan and heat slowly and a little until the mixture melts. TAke away from heat and add the flour & the candied & dried fruit.
Put teaspoon-sized amounts on baking paper - they'll look better if you spread them out a little - keeping a bit of place between the cookies. Bake for 10-12 minuts until the borders take some colour.
Melt chocolate and apply liberally to underside of cookies.
